Executive Chef Ryan Sonson oversees kitchen operations for all dining outlets at ‘The Sentosa, A Beaufort Hotel’ which includes the iconic restaurant, ‘The Garden’. With 16 years of experience in the hotel and restaurant industry under his belt, Chef Sonson has held senior positions in the Fairmont Nile City in Cairo, Egypt; The Mandarin Oriental Hotel, San Francisco and the Four Seasons Hotel, Newport Beach. Ryan’s number one passion is food, and he considers Singapore “a food paradise” where Singaporeans have a very developed palate. It is these high expectations that excite Ryan and will keep him and The Garden team on their creative toes. He best describes his signature style as “keeping flavours clean, and presentations simple, with a dash of wow!” In keeping with The Garden’s “conscious dining” concept, Ryan is looking to source for more ingredients locally in hopes of leaving less of an environmental imprint. He also plans to have a hydroponics farm built closer to The Garden within the next few years so that diners can literally see where the ingredients for their food come from!
